There is no doubt that salads are healthy, and you should have salad daily.
Here is one of my favs …
Greek Isle Salad
2 medium tomatoes cut into small wedges
1 diced cucumber
1/2 purple onion cut into rings
4-6 Greek olives, if desired
1/4 cup extra virgin cold pressed olive oil
1-2 juiced lemons
1/4 tsp. each: oregano, salt, basil, garlic powder
1-2 cloves garlic minced
Mix well. Refrigerate for up to 1 hour before serving.
Serve on a bed of fresh spinach leaves.
